Sencha Green Tea

Each of the green teas listed on the Menu is measured and prepared at the table, with the appropriate teapot suitable for the particular green tea variety, providing two to three servings.

URESHINOCHA  |  $12

This variation on Sencha is from Saga, in Southern Japan, and has pronounced citrus notes, a distinctive vegetal bouquet and a full-bodied flavor.

YAMECHA  |  $12

A medium bodied tea, slightly milder than Sencha, with an exhilarating aftertaste. A fresh, green aromatic tea.

TENCHA  |  $17

This is a very special tea, which is quite rare even in Japan, used primarily for making powered Matcha.  The color is dark green and the tea leaves are finely cut instead of rolled. The brew is sweet and ethereal. It has a pleasant medium body with a slight sweet aftertaste, similar to Matcha.

FUKAMUSHICHA  |  $13

Literally, made from “deep-steamed tea leaves”, producing a stronger flavored tea than the usual Sencha. Steeping time is markedly brief to keep the tea from becoming overly strong.

SENCHA  |  $14

The most popular green tea in Japan with a bright fragrance and crispness, leaving a refreshing aftertaste. Used throughout the day and as an aperitif in Japan.

ORGANIC SENCHA  |  $15

Sencha produced under organic growing conditions.

SHINCHA (Kyoto)  |  $19

A premium Shincha with the usual elegance and full flavor of teas from Kyoto. Available in the spring of each year. The first flush of young buds are picked, dried and shipped for immediate consumption in Japan. We are fortunate in being able to offer Shincha during until the end of summer.

Available in the spring of each year. The first flush of young tea leaves are picked, steamed, dried and shipped for immediate consumption in Japan. We are fortunate in being able to offer Shincha during spring and summer, as it affords a most delicate and ethereal taste of spring.

GYOKURO  |  $28

Considered to be the most exquisite and elegant tea in Japan with a natural green tea sweetness, cultivated with extremely strict conditions of production under shade, resulting in dark green tea leaves and a deeper color to the brewed tea. The tea is brewed with water at a lower temperature than for other green teas in order to preserve its delicate bouquet. This is the most desirable and famous of Japanese green teas and, because of its rarity and concentration, is served on special occassions in demitasse style.

GENMAICHA  |  $12

Green tea containing roasted rice kernels, providing a refreshing enhancement to the traditional green tea taste, with distinctive and robust wheatlike notes.

HOJICHA  |  $12

Green tea which is lightly roasted, providing a slightly nutty flavor and used as a digestif in Japan. Hojicha is much in demand for those with a low tolerance to caffeine, even though most of the green teas are substantially less in caffeine content than other types of teas or coffee. The roasting process oxidizes most of the caffeine content in Hojicha and results in a tea considered appropriate for consuming before retiring.

KUKICHA  |  $12

Green teas usually contain only the tea leaves, but Kukicha also contains the stem portions as well. This gives it a more woody flavor, similar to the effect of aging wines in oak barrels. The aromatics are more pronounced, but still quite light and bright.

BANCHA  |  $12

The “vin ordinaire” of green teas which includes more of the leaf intact, and represents the late harvest, in contrast to Shincha. The tea leaves are larger and more mature, with less caffeine and tannins, providing a more robust, somewhat smoky, whole-grain flavor when steeped. Our variety is Kyobancha, eponymous with Kyoto, which has a pronounced cedar bouquet.

MATCHA  |  $13

This selection utilizes pure, powdered green tea leaves used in the Japanese tea ceremony. It is produced by a stone-grinding process in which green tea leaves are ground to an almost nano-consistency, frothed and served as a single serving in the traditional tea cermony style. Matcha provides the most intense green tea taste experience of all of the green teas.

MATCHA LATTE  |  $15

Matcha, in its modern form, can also be enjoyed as a Matcha Latte. Matcha is made in the traditional manner and served, as a single serving, with a topping of foamed soy milk and accompanied by a small serving of Maui natural cane sugar syrup.

TGT BLEND  |  $13

The Green Teaist’s own blend of Sencha, Kukicha and Matcha, providing a unique amalgam of three different green teas in a blended form, providing a rich green tea aroma and a uniquely smooth and distinctive green tea taste.
